Baked Chicken Cordon Bleu
Ingredients
- 2 (6oz) skinless, boneless
chicken breasts (thin)
- salt and pepper
- 2 slices smoked ham
- 4 slices provolone cheese
- flour
- 2 eggs, beaten
- bread crumbs (enough to coat
2 chicken breasts
- cooking spray
- large baking dish (large
enough to fit 2 chicken breasts)
- toothpicks
Directions
- Season the chicken on both sides
with salt and pepper.
- Cut chicken butterfly style (cut
lengthwise in half)
- Place 2 slices of cheese on each
chicken breast then, rollup the chicken
so that the cheese and ham are inside.
Stick several toothpicks in chicken to
keep it together.
- Coat chicken in flour. Shake off
excess flour. Dip chicken in eggs, then
coat in bread crumbs. Do this to both
chicken breasts.
- Spray a baking dish with cooking
spray, and place the chicken on it.
- Spray the tops and bottoms of the
breaded chicken with a heavy coat of
cooking spray.
- Preheat oven to 400 degrees. Bake
for 20 minutes or until the chicken is
165 degrees inside.
- Serve hot and enjoy!
