   Baked Chicken Cordon Bleu

 

Ingredients

  • 2 (6oz) skinless, boneless chicken breasts (thin)
  • salt and pepper
  • 2 slices smoked ham
  • 4 slices provolone cheese
  • flour
  • 2 eggs, beaten
  • bread crumbs (enough to coat 2 chicken breasts
  • cooking spray
  • large baking dish (large enough to fit 2 chicken breasts)
  • toothpicks

 Directions

  1. Season the chicken on both sides with salt and pepper.
  2. Cut chicken butterfly style (cut lengthwise in half)
  3. Place 2 slices of cheese on each chicken breast then, rollup the chicken so that the cheese and ham are inside. Stick several toothpicks in chicken to keep it together.
  4. Coat chicken in flour. Shake off excess flour. Dip chicken in eggs, then coat in bread crumbs. Do this to both chicken breasts.
  5. Spray a baking dish with cooking spray, and place the chicken on it.
  6. Spray the tops and bottoms of the breaded chicken with a heavy coat of cooking spray.
  7. Preheat oven to 400 degrees. Bake for 20 minutes or until the chicken is 165 degrees inside.
  8. Serve hot and enjoy!
