Ingredients
- 6 medium potatoes
- 2 hard-boiled eggs, chopped
- 4 slices bacon, diced
- 1/4 cup minced onion
- 1 egg, beaten
- 1/4 cup cider vinegar
- 1 3/4 teaspoon salt
- Cook potatoes and add chopped eggs.
- Fry bacon and onion until a delicate
brown. Strain, reserving bacon fat.
- Add fat slowly to beaten egg and
beat well.
- Add vinegar and salt and pour
mixture over potatoes.
- Mix lightly to blend well; heat in
double boiler.
- Serve Hot & Enjoy!
