Hot Potato Salad

 

Ingredients

  • 6 medium potatoes
  • 2 hard-boiled eggs, chopped
  • 4 slices bacon, diced
  • 1/4 cup minced onion
  • 1 egg, beaten
  • 1/4 cup cider vinegar
  • 1 3/4 teaspoon salt

Directions
  1. Cook potatoes and add chopped eggs.
  2. Fry bacon and onion until a delicate brown. Strain, reserving bacon fat.
  3. Add fat slowly to beaten egg and beat well.
  4. Add vinegar and salt and pour mixture over potatoes.
  5. Mix lightly to blend well; heat in double boiler.
  6. Serve Hot & Enjoy!
