   Peanut Brittle

 

Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 3 cups raw shelled peanuts, skins on
  • 2 tablespoons butter
  • 2 teaspoons baking soda

 Directions

  1. Heat sugar, syrup, water, and salt to a boil in a saucepan.
  2. Add peanuts. Reduce heat to medium and stir constantly.
  3. Cook until hard crack stage (about  300 degrees Fahrenheit)
    * Hard crack stage- when you drop a little of the mixture in water- it will shatter at the slightest pressure. This is the ideal stage for making toffee, nut brittles and lollipops.
  4. Add butter, then baking soda. Beat rapidly and pour on a buttered surface spreading 1/4-inch thickness. When cool- break into pieces.
  5. Store in a airtight container.
  6. Serve and Enjoy!
