   Pineapple Chicken

Ingredients:

1/2 cup thinly sliced onion
1/3 cup sugar
1/4 teaspoon garlic powder
1 cup ketchup
1 (20-oz.) can pineapple chunks, drained, saving 3/4 cup liquid
2 tablespoons lemon juice
2 tablespoons soy sauce
3 whole chicken breasts, skinned, boned, and cut into 3x1- inch strips
1/4 cup flour
2 tablespoons extra virgin olive oil
1 tablespoons sesame seeds
*Hot cooked rice

Directions:

1. Preheat oven to 375 degrees F. In medium saucepan, combine onion, sugar, garlic powder, ketchup, 3/4 cup liquid pineapple juice, lemon juice and soy sauce. Bring mixture to a boil; simmer for 15 minutes, stirring occasionally.
2. In plastic bag or shallow bowl, toss chicken strips with flour to coat.
3. In large skillet over medium heat, cook chicken in hot oil 4 to 5 minutes or until lightly browned.
4. Arrange cooked chicken and pineapple chunks in ungreased 12x8- inch (2 quart) baking dish. Top with sauce; sprinkle with sesame seeds.
5. Bake at 375 degrees F for 20 to 25 minutes or until chicken is hot and sauce is bubbly.
6. Serve over hot cooked rice.
